What is the difference between the red and black grill as there’s a £100 price difference?

its the extras that it comes with, so a grilling basket, and meat probe etc. not forgetting the rather snazzy colour scheme! :)

Does this outdoor Ninja cook with the lid up or like indoor Ninja's the lid has to be closed to cook food.

If you using it as a grill like a normal barbecue lid up. But if you air fry and wish to smoke food lid down as it cooks both sides at once. Would highly recommend it.

How easy is it to clean? Can you put the grill in the dishwasher?

The grill plate is removable and a breeze to clean, there really is no need to use a dish washer, BUT if you are hell bent on using one, then yes you can pop it in a Dish washer no problem, its not the smallest item so it will take up a lot of 'real estate' but that's the price you pay to make use of the dishwashing device :) ..
