How exactly does the Presta valve adapter go on the valve? The threaded part doesn't screw into anything.

I do not have any bikes with sew-up tires, but I believe that the adaptor needs to be screwed to the Presta valve on each of the tires. It does not attach to the pressure gauge.

Is this display backlit?

The display is LED, not LCD (which would require backlighting for legibility in dark ambient conditions). Because it is an LED display, each segment of the digits is illuminated. It is easy to read in the dark; however it is more difficult to read in bright sunlight. If you have trouble seeing the digits in bright sunlight, it helps to shade the display with your hand to improve readability.

Does the gauge have pressure relief capability?

No. The gauge does not provide a relief valve for bleeding off pressure.
