This gelato truly is strawberry CHEESECAKE flavored, and not just plain strawberry. It's delicious. It's also ridiculously hard to make by hand. On paper, it's easy enough. Mix the ingredients, freeze, break apart, whip up, freeze again. In person, however, it's tricky. Mixing the first time is easy. Putting it in the freezer is easy. Waiting for it to solidify is hard—it took over a day for me. If you try to whip it up too early, it melts because it's not fully frozen, and when you refreeze it, it gets ice crystally and tastes like freezer burned ice cream. So for this flavor, I let it freeze fully, then took it out and tried to break it up with a fork. One bent fork later, I chopped it up with a chef's knife, and that was a pain in and of itself. Took a lot of jabbing the point through and then leaning all my weight on the handle. As I chopped, my fingers froze and the gelato melted, even though I was using a metal bowl I'd put in the freezer beforehand. Then I had to whip my chunks of gelato, and that was also too hard. The beaters just wouldn't whip up the frozen rocks of gelato. It took more time (and more thawing) to get it to anything resembling a whippable state. I did my best, then put it back in the freezer for a refreeze. When I went to scoop myself some, it was like trying to scoop a rock. Maybe sandstone. I was able to chip off slivers of the gelato using a scoop soaked in hot water and rinsed in hot water after every scoop, but the slivers were so thin that they melted almost immediately. By the time I got myself maybe one full scoop's worth of gelato in my bowl, it was basically strawberry cheesecake soup with a few chunks. Still had a delicious flavor, though. I don't know if an ice cream maker would make this any easier. I've tried two flavors now and struggled both times, but I don't have an ice cream maker to try that way. If you have one, maybe it'll be better. Again, the flavor is excellent.
