Good product - cheaper than others
This is very similar to the considerably more expensive NOW brand. I guess this is aimed at the food processing/culinary crowd rather than those seeking a source of choline. It has a mild and pleasant taste of sunflower seeds and could be mixed into lots of dishes without dramatically affecting flavour. I mix it into a slaw where it serves as the fat component of the dressing. I understand that sunflower lecithin is a better source of choline than the (cheaper) soy variant. Yes, it is a big tub for the contents ( no doubt it makes production of a range of 'special ingredients' more efficient - the label wrap can be completely and easily removed) but I'll always find a use for a small, handled, lidded bucket - and if you have trouble opening it get a competent adult to help ...

Decent boding agent, works well though some applications the liquid works best to avoid clumping . Not a bad price and goes a long way

A good source of choline
This is a fine powder which is a food additive intended as an emulsifier. I mix a half teaspoon with a dollop of greek yoghurt and it tastes great. There is loads in the pot so it should last a long while.

great stuff, but
its the real deal and very good for you by i have not found a way to take it that is not unpleasant takeing it raw it sticks to the teeth and gums. i did find a way by warming up MCT oil and adding it to that but its a lot of effort compared to just takeing it i will try adding it to food.

Good emulsifier for making oat milk
I bought this product to emulsify my home made oat milk. My first attempt failed, possibly due to not using the product at the right stage nor in a sufficient quantity. On my second attempt, I added the lecithin powder and a bit of cold pressed rapeseed oil to oat milk that had first been blended and then strained. I blended the mixture at high speed for a minute and achieved the desired result. The oat milk hasn't separated at all, and neither has it split when added to hot drinks. If you add a bit of salt and a small quantity of sweetener of choice (I used stevia), the result is comparable to barista-type oat milk blends at a fraction of the cost. Will definitely buy again.
