What are the health benefits?

Health benefits to me are no sugar and flavored water, and the carbonation. I have given up soft drinks which are so loade with sugar and are so bad for your bones. Hope that helps you!

When can is opened, how long before it is no longer bubbly?

I can tell you that it stays bubbly a lot longer than soda pop! I open a can at night before I go to bed and it will still have a bit of carbonation nearly five to six hours later.
