Favorite pan
Love the design, pricey but well worth it, it my first stainless pan, cleans up nice, took a little bit to get used to but I'll never go back now. Beautifully made, heavy duty, it will last forever.

As good as stainless steel gets - Should last forever.
I've been using this pan for a couple of months now, having switched from non-stick pans. I finally got tired of having to replace my non-stick pans after a few months. This pan should last longer than I will, and I have no concerns about teflon getting into my food. Though this pan seems expensive at first, considering it will last decades it becomes a bargain in the long run. Like many reviewers have already said, you have to learn how to season the pan and preheat it before each use. It is certainly more work to own than a non-stick pan, and it has taken some time for me to get used to it. By seasoning and preheating the pan, I've been able to cook eggs without them sticking, which I think is a good test. However some other foods have been sticking a bit, though cleanup is easy. If you are prepared for that, I think this is as good as a stainless steel pan gets, though I admit I have never used All Clad. Preheating this pan takes 5 minutes at medium heat on my stove, and I would not want a heavier pan or it would probably take even longer. I'm not sure how 7 layers is better than 3, but the heat does travel well up the sides of the pan. I'm not sure if the 316Ti is a true benefit or good marketing, but being a bit of a science geek, I dug into it a little and it seems like this is the highest quality, most corrosion resistant stainless steel available, the kind they use for medical implants. The weight is good, and the handle is comfortable and stays cool except for the inch or so next to the pan rim, which is not where your hand goes. There has been no warping whatsoever. Given the price difference, for my money I would opt for these over All Clad. I wish they sold an 8 inch pan with the 316Ti as an individual item (you can get it in a set).

Not just Kitchen bling
Great alternative buy to the Saladmaster pieces which are way too expensive. Made with the same grade of Stainless Steel with Titanium (316ti) as the aforementioned product line, this pan works and cleans the same way. Learning to use stainless steel cookware after decades of non-stick cookware will take time and effort. Looking to purchase more Hammer Stahl cookware. Pros: - Excellent value purchase vs.the "at home" sales pitch cookware - Best surgical grade stainless steel material - Heavy pan feels very sturdy - Handle stays cool while cooking - Beautifully machined cooking surface - Shiny polished exterior and handle - Should last a lifetime - Lifetime Warranty (with online registration) - Excellent packaging for safe delivery Cons: - Different cooking prep and techniques than non-stick pans - Takes more effort to keep shiny (Use Bar Keepers Friend to help) - Not cheap

Quality period.
I cook frequently and have used many types of pans in my life. This pan is head and shoulders above anything I have used before. Not cheap but maybe that's the point.

A few minor quibbles, but an overall great skillet
Two reasons for four stars rather than five. Actually, I would give it 4.5 stars if I could. Compared to All Clad or even Cuisinart Multiclad Pro, this pan is much lighter in weight. While my wrists appreciate that, it tells me the 7-ply claim is somewhat of a gimmick and if there are actually that many true layers they are laughably thin. I also take away for the fact that I do not love the handle on this pan. It is short, fat, and rounded. This pan could be unwieldy and would likely turn in the hand were it not so lightweight. The good points are the lighter weight is easy to handle for my poor arthritic hands and wrists, even without a helper handle, so maybe that’s not a true negative and I have just come to expect quality metal pans to be quite heavy. The pan heats very quickly, almost two quickly, so have your food prepped and ready to go. I’ve gotten beautiful sears on steaks with nice release. The pan cleans up easily. An included cover would have been nice, but I am using one from my huge everyday or casserole pan. Overall, I would say the pan works well at a reasonable price point. **Update as of 8/18/20. I am still pleased with the performance of this pan. I see a number of negative reviews about warping, and I have to say I don't know what they are doing to their pans, but mine is still in pristine condition after more than two years use. BTW, if one feels the need to get a pan screaming red hot (no reason to do so, even for a good sear), use cast iron for that; that said, even cast iron could crack from such abuse.

Very high quality.
This pan will last forever. I use it for lots of things. It’s a good size, has high sides to prevent spillage, and holds a fair amount of ingredients. It’s very fancy looking. It was easy to season and I have not had problems with food sticking. Even though they use titanium in the pan to keep the weight down, it’s quite heavy and really can be too much to lift with one hand when filled with food. I’d consider this a 2-handed skillet.

A really great all purpose pan
I tried several non stick pans and no matter what the technology, none lasted more than 2 years before discoloring and losing the non stick properties. Nothing beats stainless steel. Heritage makes a superb all around pan. I have done fried rice, eggs, and grilled sandwiches in this pan. All turned out great and the heat is very controllable. The pan cleans easy, but for sticky stuff I recommend using one of those steel scrubbers. I’m glad to have this pan that is made in the USA in my kitchen. I cook alot and it is becoming my goto pan.

DANGEROUS DO NOT BUY UNLESS YOU WANT 2ND DEGREE BURNS
pan temperature deceiving - extremely dangerous. do not buy. I heat pan per instructions on medium to medium low heat. check temp of pan with thermo pro chef temperature infared and temp shows 200f, i tried this 2 days in a row just to make sure its not me heating pan too hot or anything of the sort. Then i put the avocado oil in pan and oil temperature became 485f instantly upon pouring the avacado oil in pan. this has happened 2 days in a row. how can the temp of pan inside bottom be 200f and then as soon as you put avacado oil in the oil goes up to 485 and splattered all over my wrist giving me a severe burn, I am contemplating suing the manufacture of this pan, the pan does not show the true temperature with 3 different temp devises, how can it be, i have no idea. the measurement of heat does not go up like this on any other pan i have used in my 70 yrs of life on this planet. with coated pans, the temp is the temp regardless you add a avacado oil in which is the preferred chef oil to use so i have a severe burn non my wrist 3 inches long and 1/2' wide will be filing a suit against the manufacture of this pan...
