Do you need to use the insert to keep food hot?

I don't think so. The insert is just another small compartment for food

Is there any plastic that touches the food?

Yes. The small container has a lid. The seller says that it is silicon rubber. I do not believe that it is a food level silicon rubber because it send out strong odor. You can remove that lid, but your food may not keep warm longer enough or may leak through the vent in the cover.

What material is the interlayer made of?

I don’t know, but do not waste your money. It does not keep your food warm for 6 hrs. I tried 5 hrs and still not warm. Very disappointed
