will this work on the PSI CSC500 chuck?

It supposedly works with all C series chucks. I don't have a CSC500 but it works on my PSI CSC2000C chuck. There's only 1 screw that holds each jaw to the chuck, so it is subject to some flexing.

Will this fit on an older Unimat mini lathe?

It fits any lathe with a 1" x 8 tpi spindle. If your spindle is about 1" diameter it probably fits. A 1x8 is probably the most common spindle on small lathes.

Probably not. This is for the PSI C Series lathe chucks.
