I used it in the cake itself and for the icing. It was great!It's finely ground, and on the darker side. It made a tremendous, creamy icing and the whole confection was chocolate perfection. This was easy to work with and made good results, it's just a bit expensive. It says it's baking chocolate but it's good for more than that! It's very deep in color and rich in flavor. The fat content is higher than most and this increases the flavor. We used it in mousse and it tasted better than any we have ever tried. It also made very rich hot cocoa. We are trying to ration it, since it costs considerably more than standard cocoa, but it's so addictive! Maybe the high price is a good thing otherwise we would go through this far quicker than it would be healthy.
