Don't even think about using this without a safety glove, and keep the glove on whilst washing and drying the thing. It is utterly lethal. Presumably a professional chef is less of a clutz than me. But you have been warned! Great for juliennes, gratins, that sort of thing. You can slice MUCH thinner than with a knife or even a Kenwood slicer attachment style thingy. Review: The only game in town... - There's a reason why this is the standard in professional kitchens - it's in a totally different league to my previous run-of-the-mill mandoline. This one is pricey, but really sharp and robust. The blade is removeable, so I will be able to [carefully] sharpen it when it dulls. Replacement blades are also available. Easy to adjust thickness with large screw mechanism. Easy to clean - assuming you are just using it for vegetables etc - rinse under tap with a sponge (careful with that blade).
