How great is it that a chef took his family farm in Tennessee & elevated it to one of the most elite hotels & restaurants in the country?  Even better that it was all done by celebrating & maintaining the original food & culture of the area.  Pasteur raised Pork authentically smoked, Lamb Cheeses, Great recipes for Foragers for Fiddlehead Ferns & Ramps.  All beautifully photographed at this Smoky Mountain Farm turned 5 star Hotel.
