wonderful taste

needs more pop
The taste was good, but the texture needed more pop. As a natural product I'm sure there is some variety between batches. Shipping was excellent and arrived in a small styrofoam box with two ice packs that were mostly frozen. We enjoyed it with creme fraiche, toast points, and champange. The next day I made omelettes with an aged truffle pecorino and topped it with the creme and this roe. The flavor was enough to stand up to the cheese though fresh shaved truffles probably would have over powered it. I recommend this product for sure seeing as Siberian "caviar" is twice as expensive and half as fresh and the real caspian too rich even consider until i win the lottery.

It's just OK
Not the merchant who was fine and prompt. The item well packed. But it lacks the grace and texture of Paddle-fish and of course is nothing like even Israeli or french farmed Sturgeon. Tight well formed eggs, but much too small and characterless. If you are looking for a Sturgeon substitute I would go with the Paddle-fish

Should have known. Price was low. Nothing like caviar. No texture. Just mushy, and unpleasant. Donโt bother. Spend a bit more, or donโt.
