If this is gluten free why does it mention wheat several times in the ingredients? Is it gluten free or not?

The manufacturer is best placed to answer your query.

is this sauce thick or watery like soy ?

It is thick and not watery and tastes great. I use it on chicken and pork and usually pour it over the meat straight off the grill.
