Can the two 24oz jars be directly used for blending or do we transfer from pitcher each time?

yes they can be used for blending, it comes with an attacment for the cups

is the pitcher glass - the description says Material: plastic

It is not glass. It’s made out of hard plastic.

Does the middle / tall set of blades come out? I had an old one where it came out but still had a blade at the bottom. Is this unit like that?

Yes, the middle/tall set of blades do come out. No blades remain when you pull out the blade column for cleaning or some other purpose.
