The knives are sturdy, sharp and there is a knife sharpener right on the holder. I would highly recommend this set to the average home owner...ie not a professional cook set but it does a a great job. I chop a lot of vegs. **Q: For longtime users how do they hold up?** A: Have had them for seven months now and they are holding up fine. **Q: Are they rust proof?** A: This depends on the grade of stainless steel. Marine grade stainless which is pretty common, will rust over time especially if not properly maintained. However if you maintain 316 marine grade, it will most likely not rust and last a lifetime. There are higher grades used in aerospace also known as aerospace grade. Stainless steel is an alloy, the higher the grade, the more pure it is and less carbon it contains. More carbon=more rust.
