What does asafetida actually taste like?

Raw hing smells fierce, but thirty seconds in hot oil or ghee transforms it. Cooked, it reads like sweet onion with a mellow roasted garlic note, which is why it rounds out dals and curries so well.

Can I really use it instead of onion and garlic?

Yes, that is its classic role in Jain and Satvik cooking, and a favourite of anyone who cannot eat alliums. It is not a one-for-one swap, so use a pinch wherever a little onion or garlic is called for.

How much should I use the first time?

Start with about one eighth of a teaspoon, bloomed in hot oil, for a dal that serves four. Hing is potent, so taste as you go. You can always add more, but you cannot take it out.

Does this jar contain gluten?

This jar uses wheat as a binding agent, so it is not gluten free. Rani also makes a gluten friendly asafetida that uses rice flour and turmeric as the binder instead.

The aroma is very strong. Is that normal?

Yes, a powerful aroma is the sign of potent hing. Close the jar firmly, keep it in a cupboard away from the hob and always use a dry spoon. Many customers also store the jar inside a sealed bag.
