Can this seat in place, substituting one grill or does it soley sit on top of grill??

It replaces one of the grills. It fits nicely in the same spot. It does not sit on top.

Can you put 2 of these griddles side by side to make a bigger flat top cooking surface?

Not really… that was my hope too but each griddle has a raised edge so they’re always 2 separate cooking spaces.

Can you use metal spatulas with this griddle?

Yes, definitely! That's how you lift burgers etc from the griddle and is a way to wipe off some food debris.

Can this be used over an open fire (charcoal)?

Made of cast iron don't see why not but made for Webber Grill
