Review: Excellent quality einkorn with rich flavor and great performance - This is outstanding einkorn flour. The grind is fine and consistent, and the flavor is richer than modern wheat. I used it for a loaf of einkorn bread and it came out dense, golden, and very tasty. That is exactly what you expect from real ancient grain. The dough handles differently than regular flour, but once you learn the feel of it, the results are excellent. I have not tried cakes yet, but I imagine they would come out more like a pound cake: dense, moist, and full of flavor. This is great flour overall.
