I'm going to use this to glue a cracked headstock on a Guitar, how long will it take to dry completely please?

Tirebond Original Wood Glue is dry after ca.2 hours in 20 C. Final strength : after 10 hours.

Is it suitable for toy making

Hi, Not used this for toy making but will give you what info I have.Quite runny, doesn't feel particularly sticky when in use and flows well into and around joints.Excess cleans off easily with water.Instructions says suitable for hard & soft wood. Clamp for 30mins and can be in full use after 24 hours.Resistant to heat and can be painted.I used this to repair a couple of drawers in a divan bed which had come apart and the it has remained sound since, in pretty much daily use.

Would this be ok for putting a wood dolls hohse together?

Yes, this is ideal for such an application - it is a great interior wood glue, good handling time, and any squeezeout is easily cleaned up with a damp cloth. It can then also be painted and finished over should you desire. Perfect choice.

Is this glue reversible, like hide glue?

Yes, it is "reversable", but a cow-glue would be more so. To open a Titebond Original joint use warm water and a palette knife. If you haven't got access to get water and a knife into the the joint then you are out of luck as it's strong stuff.
