I am so impressed with this pan
I have a number of De Buyer, mostly the more expensive ones with the handle that can go in the oven but this is the one I come back to most often. Pros: - Its light and so easy to handle - It's easy to season - Heats up very quickly - Great for a variety of cooking, I do all my eggs, mushrooms and smaller batches of non acidic foods and of corse crepes and pancakes. - Affordable for a life long pan Cons: - Its not suitable for induction - You have to be careful to not heat it up too quickly and let the heat spread out otherwise you get hot spots on a gas hob Tip. If you are moving to carbon pans get your self some chainmail to clean it and dry it by heating it up on the hob and wiping with a super fine layer of vegetable oil before packing away. Using heat to dry means there is no moisture and soon it will be the best non stick you have ever had.

Amazing pan for pancakes. Totally non stick. Now a convert away from Teflon pans.
Purchased this after reading reviews to replace yet another ageing teflon Ikea crepe pan. You throw away a pan because the Teflon is warn. Which is crazy. But was unsure if it would really be non-stick or not? I followed the instructions 100% and have to say that I am amazed that it is indeed just as good as a teflon pan for pancakes. Though I have tried eggs (fried and scrambled) for me it is a pancake pan. The steel retains heat really really well. And being thicker than the previous thin aluminium teflon pans there is a more even heat distribution. The 24cm pan makes a slightly smaller than normal sized pancake or if using same ladle for mixture makes it slightly thicker. PROS: Totally non-stick for pancakes. Cleans up adequately once deglazed, rinsed in water and dried with paper towl. It will LAST FOREVER! CONS: It is a bit heavy so needs a bit of heft when flipping. The edge is a bit of steep angle so if using a egg flip need a thin one. Somehow, just doesn't feel right not being able to scrub it clean with washing up liquid.

Any problems you encounter aren't necessarily to do with the pan.
I bought this primarily to make pancakes. I seasoned the pan as recommended using rapeseed oil. So far have made two batches of pancakes. First batch was not so good they tended to stick in the middle and were very fragile. I put this down to the recipe being too thin and the gas not being hot enough. For the second batch I increased the flour by 15% and turned the gas higher and used spray sunflower oil instead of butter to lubricate the pan. No sticking and a perfect batch of pancakes. I missed the taste of the butter though so think I will substitute some butter for some of the milk next time. Even my wife who was very sceptical about my getting the pan is now converted although she finds it a bit heavy.

Good quality, good brand
Make sure you know what you’re buying before you get one. Needs to be seasoned and cared for properly. Do that and it’s practically non stick and makes excellent crepes and pancakes Has a really good weight to it and sturdy enough to last for many years

Rusts very quickly, avoid
AVOID! Was great in first two uses then started to rust almost immediately, only ever hand washed it. Had to bin it. Reviews seemed great however if reviews were written upon first use that, would explain it.

Was going to leave 1 ⭐ but then a miracle happened
The more I used the better it got. The process continues. Amazing piece of metal that fries it all. Better than non stick tefals. Pancakes of any kind ( sourdough , potato ones included), omelettes, eggs and even meat or fish. It does it all....All for a tenner ! Joy of cooking. The oils / fats/ shortenings I used so far ( all with high smoke point) -Rapeseed oil ( great for frying and maintenance - for that final touch after wash/good rinse in hot water, dry it and apply oil with a paper towel) - beef drippings- I like them because they taste great, full of flavour. - lard - coconut oil. ------------------- Made in France. Supporting our European economies, too. Get one . Look after it. You won't regret it.

small, heavy, label says no good for induction
It is smaller than you think and very heavy. The package says it is not suitable for induction hob but it works on induction hob. Very confusing description.

Brilliant!
Needed a new Crape pan after the one I'd had for about 2 1/2 years handle broke, so thought I'd check out a couple of recommendation from different cooking programmes I've been watch online and came across this little beauty from 'de Buyer'. What can I say apart from a really impressive little pan at a really good price point! Well made and solid construction.. Quality materials! Speaking as a metallurgist of over 30 years.. I'll definitely be looking closer at the other pans in their collection, especially their 'OUTDOOR' cooking range for when I'm off camping.

No Induction
It's says that it supports induction, however the packaging label says it isn't. I've read that since it's pretty thin (2mm), there is a risk that the pan will warp on induction. So I had to return this one.

Amazing pan by de Buyer - make sure you season it!
First of all - the negative reviews that say the pan does not work or is not good are simply not using it properly. Cooking with cast iron or carbon steel is 90% technique and it is simple technique. Keep your stove element LOW! If you have gas, keep it low. If you have electric or induction, you can use low medium. If you use high heat it will stick!! Onto the review: My pan is only one night old - yes I opened it last night and seasoned it with 5 layers of canola oil. Took about 40 minutes with the cool down. You don’t have to be like me, you can just season it with 3 layers or cook immediately. But it’s best if you season it from the start with 5 layers in my opinion. The pan is very light weight and solid construction. Reasonable price in 2022 given inflation. It has a beautiful deep blue steel look. Ben Stiller would be happy. You can go wrong with this pan if you don’t know what you’re doing but a little knowledge and you’ll be SAILING. 5/5
