If I pick up the 143kg grips do they start at that or is it that they increase to that resistance

I'd start with the 0.5 or the trainer mate. I think the others ones are below the 3.5's

You get 1 gripper in a pack. No point having 2 as you don't want to be squeezing on both at the same time. These are extremely tough grippers and doing sets with alternate hands is, in my opinion, the best way.
