## Description

From the manufacturer GLOBAL GS Series: Specialist Knives & Utensils for Any Task GLOBAL’s collection of small and medium knives, tweezers, food turners and palette knives for all areas of food preparation, especially lighter and more intricate work. Why are GLOBAL knives the trusted partners of chefs and home cooks alike? Razor-Sharp Blades Hand finished from ultra hard Cromova 18 high carbon stainless-steel, these blades hold a cutting edge for a long time whilst being easy to resharpen. GLOBAL knives are ice tempered and hardened which gives the steel a special resistance against rust and corrosion . Ergonomic Handles To create the perfect balance, GLOBAL knives (excluding GSF Series) are crafted with hollow handles filled with just the right amount of sand to counter the weight of the blade. This is more precise than the full tang and bolster method and the seamless construction eliminates food and dirt traps. 15-Degree Cutting Edge GLOBAL knives are expertly designed with uniquely convex 15-degree cutting edges which wear more slowly. This is in contrast to most Western knives that use a bevelled edge. The straight edge results in a dramatically sharper knife which stays sharper for longer. Iconic Design GLOBAL Knives are hand crafted in Japan using the same traditions for over 40 years. The launch of the iconic, all stainless-steel, one-piece structure kitchen knife was an unprecedented new concept and created a new genre in the professional knife industry , known as 'all stainless steel'. GLOBAL: An Icon in The World of Kitchen Knives 40 Years of GLOBAL Knives From humble beginnings in Tsubame Japan, to becoming one of the most successful, award-winning brands of professional kitchen knives in the world, GLOBAL Knives have stood the test of time with unwavering popularity. Crafted to the highest standards in Japan, GLOBAL Knives feature Cromova-18 razor-sharp stainless-steel blades , hollow weighted handles , a 15-degree cutting edge and an iconic design . These elements have made GLOBAL knives more than just tools; they are the trusted partners of chefs and home cooks alike.

Review: Japanese Quality Edge, German Quality Build - As a professional chef, global is a brand which I've seen and worked with hundreds of times. Their prestige in the professional kitchen is only matched by Wusthof, a German manufacturer. While advertised as a vegetable chopper, the GS-5 is quite handy and nimble for use as an all purpose knife, trimming meat, breaking down caracasses etc. although I wouldn't recommend using it to try and cut through small bones, as the edge is quite fine. Due to its finer edge, Sharpening this knife without whetstones would require something like globals own GS-440SS Ceramic Water sharpener, or the MinoSharp Plus 3. These products are set to the required degree for easy home sharpening. Personally, if budget allows I would recommend opting for The Global G-5, an 18cm Blade (https://www.desertcart.co.uk/G5-Global-Vegetable-Chopper-18cm/dp/B00005OL46) or the Global G-81, also an 18cm Blade (https://www.desertcart.co.uk/global-G81-Ancien-Code-vegetable-fluted-knife/dp/B00U5VK2MU)
Review: super sharp! - this is my first quality knife, and i couldn't believe how sharp it is. you have to concentrate like nothing else. it does make life a whole lot easier though, and cuts through veggies like they are soft butter. got mine from Giltsharp, and delivery was quick, so no complaints there. i'm going to have to get a different shape knife though, as this one doesn't have much of a point on it, which i find i miss occasionally, but that doesn't take anything away from the GS-5, I chose that design for a reason. just got to decide which one to get next! probably the G2 or G58

### ⭐⭐⭐⭐⭐ Excellence, with an entry cost
*by D***T on 25 April 2010*

These blades really are as sharp as advertised. They cut cleanly without crushing or sawing. It takes less effort to produce a more precise result. The thing to bear in mind is, if you are buying or giving a first Japanese blade, that they require additional outlay for ceramic sharpeners: Shinkansen 'Water' Sharpener - Black and Red or Global Ceramic Medium Whetstone Orange - keep your knives sharp and in good condition or Global G-25: 24cm Ceramic Sharpening Steel
