Will this stand up to heat when used as a stove backsplash?

I don't know but I think it would. It's cheap, why not just try it?

How much would I need to order to cover my side by side standard refrigerator?

The best way to figure this out is to measure the refrigerator section by section & calculate square footage. There is no repeating pattern, so just order a little more than you need for error. also I recommend using gorilla glue adhesive with it on the refrigerator first or it will not stay in place. Try to avoid seams where possible. Good luck

Can this withstand heat if used to protect wall from stove splatter?

Personally I would not think it is safe for this
