Even though Pompeian and Star are the same level of acidity, Star tastes sharper and more acidic. I’m surprised how much I like Pompeian on a salad, because I like salad dressings that are more acidic. Pompeian comes in a plastic bottle, and Star comes in a glass bottle. Pompeian is easier to find on Amazon. All a matter of personal preference.

This is a very good tasting red wine vinegar, my standard for dressing salad with olive oil. Not too harsh and not sweet (the rose balsamic made by Pompeian is sweet, so if you want that, use the rose instead.) The other vinegar I really like is the white wine vinegar which I even will substitute for rice wine vinegar in a pinch--both are mild and slightly sweet. I admit a fondness for Pompeian vinegar as the firm is local to us and I love to support a company that employs people in our own region. They have adapted to the growing interest in olive oils and gourmet vinegars, providing good products for grocery store distribution. If you live in an area that is more rural as I do, an and maybe less culinarily sophisticated, Pompeian is distributed to major grocery chains so is readily available.
