Protein content is 85g per 100g. It's great for jellos and all other applications where conventional pork gelatin is used. We do not track collagen content on this item.

Does this replace Knox Gelatin, to make aspic/jello? How much gelatin to use with 2 cups or 4 cups of liquid, by tablespoon or 1/4 cup type measure?

Fish gelatin is used in the same ratios as knox, so just substitute 1:1 in your recipe.
