You want to use high acyl gellan for that, not low. High acyl is for thickening or soft/fluid gels, low acyl is for firm “jello” style sliceable gels.

Can i mix it with a spicy sauce and put on a top of jar to drink beer o similar drinks like clamato and stuff? Sorry for the weird question

Absolutely. But it will gel. This stuff is pretty potent stuff . not sure what you are trying to accomplish, but I can imagine a few possibilities ,spice gel cubes etc. Interesting. Have fun

Yes . I’ve used it . Works quite well . Try different ratio . A little more Gum but not too much

Great for the molecular kitchen
