How does the water taste? My water has a plastic taste, while others say it tastes good.

Hi friend Since the product is left the factory for the first time, Therefore, the first cycle after receiving the product is used to clean the countertop water distiller, and distilled water for the first time is not recommended for drinking. We have placed charcoal packs inside the filter to enhance the taste of distilled water. Also Please you leave 1-1/2 inches of water in the distillation process to ensure the taste.These measures will help you drink quality distilled water.

Is this distiller too loud for a condo? I previously had an older distiller that I had in the garage.

It's not as loud as my microwave. When it is closer to finishing its kind of like a coffee pot. That said, if your watching tv in the same room i would think you would be annoyed and need to turn it up. Hope that helps.

Do I have to use the carbon filter? The water has just been distilled so what is left to filter?

No filters would be necessary for water going into the unit and certainly not for the distilled water that comes out. There is nothing left to filter from distilled water.

#8 of instructions say not to use first 3 - 5 bottles of distilled water. since i am only using it in a humidifier, is it ok to use?

They may have meant to say one cycle, 3 - 5 liters of water. That's how I read it. I use a charcoal filter on my faucet that calls for a 5 mn flush at every filter change, and I assume the reason is the same for this system. Especially since the reservoir is just under 4 liters when it's full. They made a nice effort with the instructions overall, but I suspect the writer(s) do not speak English as a first language.
