How long it's the drying? I know it depends on each, but what is the minimal drying time?

As far as I know, the artisan dry pasta shou;d dry for at least 3 days (72 hours) or thereabouts. The longer it takes the better. Rumma I believe is dried for 36 hours, not bad, but not the best. It is a good pasta and superior what you would find on any store. Although Felicetti is an industrial dry pasta and not artisan, I prefer their flavor. The lighter the color of the pasta the longer it has dried, or industrially achieve the same effect. I hope that helped.
