I love that this company is so honorable. I believe they are truthful and these are organic beans. Bought the four 15 pound bags, and I have a hard time finding even one broken or brown bean in the two cups that I feed to my family for dinner. They are delicious! Thank you! Really wierd all the boo birds saying they don't soften, and that there are lots of damaged beans. Just out of the bag they are soft and delicious in 2 hours at a very low bubbling boil.

These small white beans were great; well sorted (maybe 2 tossed), color was bright, and they cooked to the perfect consistency. They're pretty pricey, but were worth it for my annual New Year's day soup.

I love the overall taste and that they cook quicker than other brands I have tried.

I slice up thin, a half package of raw bacon. In soup pot... add a container of organic bone broth plus water to equal x2 the height of the beans, the sliced bacon, a cut-up large onion, 2 tblsp. dried parsley, a few thin sliced carrots, black pepper and garlic. I don't soak the beans (1 pound). Bring all to a boil and then low simmer for about 5-6 hours. Finish by adding about a teaspoon of salt. Awesome soup. We all love it. Healthy and cheap.

I normally soak overnight and cook all beans on high heat for about 2 hours and they result in soft creamy texture. However, these beans are still s bit crunchy after cooking them for 2 hrs high hear. Is there a reason for that? Are they supposed to be cooked on low heat to achieve softness?

If I would have known they were from overseas I wouldn't have ordered them. The picture on the internet is different than the bag I received. It is clearly indicated on bag I received product of China but the internet bag indicated package in USA. I will not buy again because of this reason.....wish Amazon would make that a requirement showing or listing the country or origin......
