I don't know if you can pick color, but I think so. I got a two pack I wanted the black and white and I got the black and white and a yellow and green.

My daughter will want to bathe with this, what's the best way to dry and avoid mold?

Bathe with it, yes absolutely. Mold growth is definitely possible due to how the pieces fit together-- this would be fairly easy to check for mold growth however, easier than most other bath toys.

What if its dropped on the floor? Will it break apart?

Most anything breaks if you drop it on the floor. Carpet no tile probably it is hard plastic.

Can these be disarticulated and reassembled in a different pattern?

Personally, I don't think so because they are proportioned to fit together perfectly. It might not be a good idea to take apart. Just my opinion. I love these. I have bought several. I do know that the sound, which is relaxing and enjoyable, picks up on the phone so I wouldn't suggest as a fidget toy when talking. It's kinda funny. I get asked "What is that sound?"
