Will they shrink at all, even after several washes and in the dryer ?

They do shrink some, because they are cotton. However, the length is not affected much.

The size is large & overall length is 42" & inseam is 31" .

Can you remove the drawstring and still have elastic waist?

Yes, at least I did (HATE that string!). But I had to use small SHARP scissors to cut the string in the center/back. It's toed to the waist band in the back so it doesn't slip out. But removing it is pretty simple. Just be careful NOT to cut any part of the band. :)
