I would like to use to cook chicken, will this work?

It works great for chicken breast and drumsticks. If you use it for thighs, it's best to remove the skin first because the basket isn't roomy enough. I've used it for veggies and steaks too and it works fine. Can be a bit difficult to get clean, but I soak it in super hot soapy water and it makes cleanup a little easier. It is a time saver at the grill and that was a real plus for my husband.

Is it deep enough to put a whole 3lb fish?

Yes, but it is so flimsy, it will be difficult to put that much weight in the basket. Mine broke after 2 uses, causing me to drop lovely, hot fresh fish onto my deck.

It says it's made of stainless steel (which is good) but it also says it has a "non-stick coating", does anyone know what coating it is?

It is stainless steel. I think they consider stainless steel non stick. I do not see anything like a Teflon coating on this. I usually wipe mine with olive oil before using it. I have cooked all different types of fish and have had great results.
