The knife is just the right size for chopping up potatoes and larger vegetables, without being too big to be cumbersome. The flutes on the side of the blade reduce the chance of the knife being stuck by suction to potatoes etc. The sheath that comes with the knife has a handy knife sharpening feature as you insert or withdraw the knife from the sheath. Really good value for money for such a good qualify knife.

I’ve been using the Sabatier Edgekeeper Utility Knife for a few weeks now, and it does the job well. It's ideal for mincing herbs, cutting vegetables, and filleting fish, as advertised. The built-in self-sharpening feature is convenient, and the knife is sharp out of the box, making prep work easy and quick. However, after some use, I’m concerned that the blade might start dulling faster than I’d like. While it hasn’t lost its edge yet, it doesn’t feel like it will stay as sharp in the long run — possibly within the next couple of months. For now, it's a solid, reliable knife, but I’ll keep an eye on how long it stays sharp. Overall, a good buy for its price, but something to consider if you're looking for long-term durability.

This knife is the most useful knife I have. Sabatier great quality and the sharpening tool excellent. I use it for vegetables meat & Fish. Excellent for butternut squash

Pro Chef here, Soft Steel, okay for home use, undecided on usefulness of “Edge Keeper” Lost its edge quickly, ran over professional steel, & couldn’t handle, wasn’t up to much tbh. £12 knife, get what you pay for. Believe also sold on QVC. Apparently SABATIER is just an licensed name now😔

Perfect knife for when the full length Santoku is too much (or too heavy). At 4¾" this is the perfect length for every day tasks, so kuch so that I have bought a second and retired a couple of my every day knives. It is stainless steel which isn't as good at keeping an edge compared to iron but A.what do you expect for your money B.it does have a small sharpener built into the case (only time will tell how long that lasts). Expect to sharpen this knife more regularly if you want a sharp knife and all should be well.
