Does this egg yolk powder have anything else in it besides egg ypols (like Sodium Aluminosilicate)?

According to the list of ingredients on the package it contains only "AAA grade spray dried egg yolks". There may be more info and recipes on their web site .

It makes a little over 6 large yolks (the directions say 8 grams dried egg yolk = 1 large egg and the package contains 50 grams).

Can you make mayonnaise with this product?

I tried twice to make mayonnaise with this. It did not work either time.

Will it make hollandaise?

We haven't tried it ourselves but it should work. We would suggest adding more water (1.5-2x) when hydrating the dry egg yolk powder. this will make it easier to whisk and incorporate the clarified butter.
