Why does it say it’s dishwasher safe but that it’s hand wash recommended?

They have to be hand washed. Any good quality knife does

What steel this knife is made of? don't tell 'high-quality ... bla-bla". just provid the yype (aus-10, vg5, etc

The blade is made of 1.4116 German Stainless Steel hardened to between 55 and 57 on the Rockwell C scale. The edge is hand polished to appropriately 15 degrees on each side using the Honbazuke method. I have had mine for at least a year and it is as new. I would not run my finger across the blade unless I wanted cut.
