The one your looking at point of origin is China. The first knife I bought was a set of four from Japan and shipping was slow, but made great gifts. Second knife bought from Amazon was a bigger size and similar knife and bought for a friend. Shipping was fast. My friend likes the knife and it is sharp as new.

What is the degree the knife should be sharpened? 12,15,20 degree blade?

i use a 17 degree sharpener for all of my knives, however, anywhere from 15 to 20 degrees is acceptable, also some of the Huusk knives come with a sharpener.

Are both edges sharpened already on this knife?

There is only one sharpened edge, the top back of the knife is not sharp, and is not for cutting, who makes a knife with two sharp edges? It is a fantastic knife. you will love it. I know I enjoy working with it, and i am no Chef.
