This is a great carving and slicing knife. The blade is 12", which a lot of people like because it's not quite as long as the 14" version so it's a little easier to handle and get more accurate slices. It's fantastic for slicing prime rib, ham, or any other large cuts of meat. The red handle is great for color coding and avoiding cross contamination. This is a must for any restaurant that is carving meat to order. Sunday brunch will be easier with a long, SHARP knife to slice the meat.
