Can I use it to cover my fireplace when not in use

YES! That's exactly why I bought it. I have a gas fireplace but the cold air coming through the vents in the winter was awful. I bought this and then some black contact paper (all I could find was the chalkboard kind) to cover it since the white side shows for this magnetic cover.

Is the magnetic material to hold metallic spice containers if the material on a vertical surface?

I would say no. The magnetic material is not really that strong. I put it on the ceiling fan and gravity keeps pulling it down. I had to anchor it down

will the material stick to a metal vent that has been painted

I cut mine into 6" lengths of 36" and it sticks to a vertical vent. The whole 24x36" on a vent that is ceiling mount may be a problem but it would depend on how much surface it has to cling to. I have three sheets left of 6x36 and everything I have flung them on sticks and they're all painted. Old lead paint may also be an issue but I wouldn't know as we have few old structure in my area and lead based paint was out lawed many years before this home was built.

Will this product melt under constant low heat? From my floor furnace pilot.

i use some over my vents under couches and haven't noticed any issues in the winter when the heats always on
