Can this be played like a real guitar out of the box or do I need software?

It can be used as a real MIDI Guitar controller for synths with any DAW. It has a hardwired MIDI port on the side of body. The ad pushes its wii Rockband functions and barely mentions its MIDI functionality bcuz this was intended for Teens playing with Rockband first, and a MIDI Guitar second.

Does this work with green day wii?

It's for a certain mode they put on only one of the games (I think rock band 3?) It's supposed to mimic a real guitar. From the Wikipedia it seems like the green day game uses the 5 button (the 5 buttons towards the skinnier end) controller like this https://www.amazon.com/Rock-Band-Wireless-Fender-Stratocaster-Controller/dp/B0040J1RIQ . It doesn't have to be this exact controller, there's multiple third party brands and the 5 button guitar hero controllers work too.

Can someone recommend a good usb-to-midi cable that works with this? the cheapo i bought recognizes my roland piano but not the guitar.

You might be better off buying a MIDI interface like the MOTU Micro Lite and getting a middle of the road midi cable to go from your guitar to that, and have the Micro Lite connect via usb to the computer. This will virtually cut out any latency for your keyboard and guitar controllers. That's what I did.
