What are these bags made from? High-density polyethylene, low-density polyethylene, polypropylene, etc.?

They are made from food-grade BPA-free material.

how thick is each side? it doesn't say in the item description.

The thickness is perfect, not thin, but not too thick that they don’t seal well. They are just what I wanted and will order again.

What size is best for 8-10 XL shrimp?

Sorry that we can't make a recommendation because we don't know the exact size of the shrimp. This Vacuum Sealer Bag comes in three sizes (6" x 10", 8" x 12", 11" x 16"), you can combine the specific size of the shrimp to choose a bag slightly larger than it.

Do these bags have any effect on the FoodSaver unit itself?

Under normal circumstances, these bags do not have any effect on the FoodSaver unit itself.
