Does it have intermittent mode to stir sauce a bit every ~10min?

Is this safe for non-stick/teflon?

Yes. I bought it for my son as he makes a dish that requires constant stirring for 4-5 hours snd he uses a Teflon electric skillet. And it still looks like new

What is the maximum liquid temperature that it can be used...Can it be used to stir oil infusions?

Not sure about temp we had it about 350 degrees. I wouldn’t know about oil cushions don’t know anything about that.
