Is this an actual yeast? Can I use this in place of yeast for my baking?

It is definitely NOT yeast, it's a baking powder-type product that I have used in cakes and quickbreads, such as cornbread, but definitely not for yeast bread applications.

Do you use the same ratio as you would baking powder, ie: 1tsp baking powder = 1 tsp lievito?

Lievito Pane Angeli is a mix of what we call baking soda and baking powder, plus secomdary chemicals. Usually Italian recipes call for the whole packet for one cake. Substituiting 1 to 1 as you ask is not a good match and will not produce the same results. Use Pane Angeli when called for, and baking powder when called for.

Is this product gluten free?

This question is many years old, but in case anyone is still curious, this product is gluten free according to Paneangeli's "Senza Gluten" (gluten free) Web site at https://www.paneangeli.it/senza-glutine

Can this be frozen to extend expiration time?

Lievito Pane Angeli for cakes has an expiration date indicated on the back of the package, at the bottom, on the left. It is usually about 2 years. If you are not planning on using it within 2 years maybe the expense is not worth it. I would not suggest freezing it. The small envelopes are made of paper, and the box of something similar to cardstock. Both would absorb moisture and the content might degrade and/or hold moisture. You might want to sacrifice one envelope and freeze it for a couple of weeks just to see the results.
