Once the bottle is opened, is there a "best used by/expire" time frame?

I too am Japanese, I purchase food in bulk including 1or2 gallon containers of Soy Sauce that I put in smaller decanters for day to day use.    I’ve had some of them open for close to a decade or more with no ill effects.

Is this heat treated or pasteurized?

Accepted Answer

Yes, it is briefly heated to 80 degrees Celcius during the filling process. Scientifically, it has been confirmed that by keeping the temperature at 70 degrees Celsius or higher for at least 1 minute, and by packing in a closed container, pathogenic microorganisms do not grow and toxins are not produced. Our Ponzu sauce is filled at 80 degrees Celsius, which sufficiently satisfies the above condition.

How long does it last after it is opened and kept in the refrigerator?

I've never refrigerated my soy sauce. I've had it on my counter for several months with no problem. I live in Tacoma and it's not really hot here, but believe that soy sauce being so salty doesn't require refrigeration. By the way this soy sauce is amazingly good. I'm on my second bottle!

Shouldn't this be 35 dollars?

If you love a good soy sauce and if you live outside Japan and do not have ready access to top quality soy sauce, then yes, this is truly worth 35 dollars (plus shipping).  I recently had the opportunity to use this soy sauce with real wasabi on sashimi (a to-go order from a very good, nearby sushi restaurant) and the experience was like none that I've had in the last 30+ years of eating sashimi.  This soy sauce and the real wasabi elevated the fish to a whole new level.  Even if you only ever get one bottle to try, it is worth experiencing a top notch food product like this once in your life.
