Q: Does this come with an enclosure to cover the connections?

no it does not I built a cover out of a old fan case

Q: Would this work on a bathroom exhaust fan?

Yes, I am using this controller on a bathroom exhaust fan and it works very well. It does have a minimum fan speed though so you can only slow it down so much. But that is pretty slow.

Q: My blower has a variable speed control knob. How do I attach the wires?

It will no effect anything you attach to it this nothing but an on off switch

Q: I assume this mounts inside the stove, right? My old one is in a hole where the sensor was sticking out.

This is not a thermal coupling as would be found in a oven. This has a magnet on it, that the large circular area. I used it as a sensor on a pipe and used a metal tie rap. The part with the electrical connectors is the electrical thermo disc switch. Only its lower metal surface should be directly exposed to the heat. Such as the other body of a oven or hot water heater or in my case a small boiler pipe. The non-metallic body of the thermo disc is not intended or may not be designed to hold up to the direct heat.
