I was concerned about this. It got to me within 36 hrs of ordering (On a hot day). I immediately put it in the refrigerator once received. The product like other mayonnaise usually is refrigerated after opening but for my peace of mind, I put it in as soon as I received it and opened it when I needed it. (about 3 days later) The product did not smell, taste bad nor did anyone get sick. (We are still consuming the product and using it in recipes and on sandwiches.) Always use caution and judgement! The product does has rice, wine, apple and distilled vinegar which helps with preserving it. **Q: Does this have MSG?** A: My most recent delivery *did not* have MSG but had yeast extract.
