How long do they take to germinate(sprout)? How tall will they grow?

Under ideal conditions you can see sprouts in 5-10 days after planting. It can reach 15-25 feet tall.

What zones are best for growing? I live in new Jersey

You would not be able to grow outside. Cocao requires tropical locations but can be grown inside with proper lighting in a large planter once established.

What type of pod are the seeds from: Criollo, Trinitario or Forastero?

These seeds are from the Trinitario variety.

I'm co fused with this post. Is this a bonsai tree or cocoa?

These are seeds to grow your own cacao tree. It is not a bonsai tree, these trees should grow 4 foot in the first year. Although, I did not have any luck with my seeds. I hope this helps. Bonnie
