Review: The Best Sichuan Peppercorns I've Ever Used!!! - As soon as I opened the bag, the smell took me back in time. I can usually only get the dried peppercorn seeds where I currently live, so it was exciting to see the vibrant red color (Photos do not do justice), and smell that fresh Sichuan smell. I made my favorite chili oil, and I was surprised that I got the numbing spiciness from the peppercorns so soon. Usually, it takes 24 hours to infuse and get that taste, but I got it as soon as I tried it (a few minutes after it cooled down), and then 7 hours later, it was excellent! I will be using this spice in Hot Pot sometime, but this spice is so versitile, I'll be exploring new recipes. Good value for money. Will buy again.

I have used them as a spice in a jar of pickles, and in that sort of use (where they are a flavoring but not actually consumed), the seeds don't seem to matter a bit. However, if they're going to be ground up or used as an ingredient in a dish where they will be eaten along with the food, taking the seeds out is not difficult but can be time consuming. I de-seeded a heaping teaspoon of them, and it probably took me 5 minutes or so. They certainly give you that numb tingle! My best description is kind of a metallic buzzing numbness. The description of touching a battery to your tongue is not far off. As an ingredient in a jar of pickled okra I made, they give an interesting flavor, and the numbing creeps up on you after a couple bites. I find it a pleasant and interesting layer of the taste/texture experience. Overall, these seem to be very good quality. After receiving them, I found one of my local Asian markets carries a different brand, but I haven't bought any to compare. If you primarily use them in recipes where they are ground or consumed, you may want to shell out a little more for the ones that are supposed to have fewer seeds. **Q: How does it tast? I like peppercorns to be more intense flavor.**
A: I bought the "powdered" form and am disappointed. It numbs the tongue a bit...which it is supposed to do, but this powdered form gives my food a gritty texture. Rather similar to adding fireplace ashes mixed with a bit of sand. I've stopped using it because of the grittiness but also because it added no discernible boost in flavor to my Chinese dishes. Cook's Illustrated mag recommended the Dean & Deluca brand of whole Szechuan Peppercorns as their favorite, but I don't have a store near me. I'll keep looking for a better source & purchase WHOLE peppercorns next time. I have an extra grinder so I can dedicate it to this purpose.

**Q: The photos here show no visible amount of black seeds in this material. Are  there seeds? Regular or Premium version?**
A: Yes, unfortunately this has quite a few of the black seeds in it.  Maybe 10% of the contents will have the black seeds, which is a marker for a very poor quality product.  I'm quite disappointed with the number of seeds.

**Q: How long can it keep its quality?**
A: Just see the stated expiration date. For peppercorns, they usually last a few years if you keep them in airtight jar.

**Q: Would it be good to store them in refrigerator? Or room tempreture is fine?**
A: I store them in the shelf. If you'd like to put them in the refrigerator, it would be better I believe.

### ⭐⭐⭐⭐⭐ Super minty, numbing hot unique spice

Perfect, what I was looking for. My wife is Chinese-American but she was born in the Szechuan region and has tasted the cuisine before. This is very powerful and super minty and strong even with the seal on somehow. A normal black pepper grinder won't get it due to its odd shape, but a finer electric grinder will. Very delicious and super spicy, and minty numbing spice. Somehow has both numbing spice and very hot spice flavor. If that's what you're looking for, perfect item. However, I'd use it sparingly because it's so powerful. Add a bit too much and it'll overwhelm whatever dish you're putting it on!
