We use tamper proof stickers to hold the box together and this keeps the candy safely inside, and everything else out... however the candy can still breathe as it is not sealed in plastic. If you seal it in plastic you can end up with condensation inside with the candy when it ships, and then you end up with pitting of the candy, and it does not seem to stay fresh tasting at all. The shelf life is about 10 weeks from when we ship it. We crystal coat our maple candy with a concentrated pure maple syrup to create a candy shell that "locks in the freshness." Without this the candy would dry out in a matter of days or a couple of weeks. With this additional step of coating the candy you get 10 weeks. Odds are it will keep for much longer, however this is the time-frame that we guarantee freshness. (For most people it is gone waayyyy before the date comes up!) The process of producing pure maple syrup does require a defoaming agent to prevent it from boiling over the pans. The defoamer used for this particular product is certified organic safflower oil. The amount is tiny and is so small that labeling does not even require it be listed. We are talking something like a pint used for over a thousand gallons. Then almost all of this is removed through the filtering process. I was blown away, as it was like nothing I had tasted before. It looked, and at first tasted, like it was just a block of maple sugar. But after a moment, it melted in my mouth with a soft exquisite texture like butter or fudge. When I ran out, I was determined to find some stateside... which I did Amazon. I ordered, but what arrived wasn't very good - rock hard and not that tasty. I gave up for awhile. Fast forward a couple years and I recalled my trip to Canada. I checked Amazon and now there are four brands of maple candy available. Armed with a budget of $60 to do a group tasting, I ordered all four. They are pictured in my photo from top to bottom: Fullers, Mansfield, Nova, and Butternut Mountain. A group of friends tasted all of them (others were blind tasters but I knew which was which). Mansfield was the favorite by a good margin, with that wonderful buttery meltaway texture. It brought back those memories of the first time I had enjoyed maple candy. It also had the most premium looking packaging - a black box with gold leaf lettering. There were a couple dissenters who liked the Nova (the dark one) the best because they thought it was more "maple" and less "sweet." I found it to be way too hard (even right out of its airtight packaging) and not a contender. Fuller's was probably the most interesting looking of the bunch, with several different molds used, not just the maple leaf shape, and on taste it was the consensus second place finisher. Butternut mountain was third place, with "some" butteriness but not much. For most of us it was still preferred over Nova though.
