Heavy duty 12 gauge carbon steel with steel riveted handles. Carbon steel is preferred by professional kitchens and is the right tool to sear, saute, grill, roast and fry. Seasoned for a natural, easy-release finish that improves with use. Great for induction cooktops. Easy care: hand wash, dry promptly and rub with cooking oil.

It comes “pre-seasoned” but the coating is rough so I sanded it off before using the pan. It looks ugly compared to the shiny stainless steel pans but it performs better and is nonstick and easy to clean by wiping it down and burning off any excess residue using high heat. Once cleaned, a light coat of oil helps prevent rust. After decades of using cast iron and stainless steel frying pans, I only use this carbon steel pan now. The handle is removable and the pan can be used in an oven or on the stovetop.

### ⭐⭐⭐⭐ Fine and reliable

I think the roughness will help it take seasoning better long term, but early on it’s a hassle to wipe out with paper towel. Cooked bacon and scallops first. Nice sear but annoying cleanup. After two rounds of seasoning it did ok with eggs. Basically just a lighter cast iron. Lodge stuff is decent value if you take care of it, but obviously the bigger pieces get super heavy. This is a nice compromise on that concern. The rubber grip is made in China if you care about stuff like that.
