Does this have to be cooked to use?

E-Z Gel is an instant starch that does not need to be cooked. Just whisk it into hot or cold liquid and it thickens. E-Z Gel is hot/cold stable, so products thickened with E-Z Gel don't separate after refrigeration like regular corn starch.

How long will this last in my pantry?

As long as the package is sealed so it doesn't get moisture in it or other contaminants Ultra Gel will last virtually forever. The technical suggestion is to rotate every 5-7 years but there's not enough moisture in there to go bad / attract critters

It states this item is Non-GMO but the ingredients beg to differ. Can you explain how you are classifying it GMO free?

The term modified as applied to food starch does not necessarily mean genetic modification. It can be modified genetically or physically. The type of corn, waxy maize is a non-GMO corn which is then mechanically processed to create an instant product

Can I add this to jam that didn’t set (contains pectin) without adding more sugars?

Yes. The result will be a softer set than with pectin, but delicious. To make it shelf stable, you need to process it in jars like you did originally. If you are starting with a freezer jam, there is no need to heat the jam again.

It is named "gel". Does this mean it is a liquid?

It is a powder that makes a gel in hot or cold water. It is called an instant starch because it doesn't need to be put into hot water to gel.
